After his successful namesake Michelin-starred restaurant (1st arrondissement), Omar Dhiab opened this temple of indulgence with its stainless steel tables and chairs and 1990/2000 French rap last May. The cross-cultural dishes, for sharing or not, combine generosity and precision and are listed by cooking temperatures and styles: Steam 85°C, Fried 180°C… Current choices include grilled glazed pigeon with apricot and chilli, poultry with Mulukhiyah sauce (a tribute to his Tunisian mother) and hawawshi – a crisp sandwich filled with fragrant beef honouring his Egyptian father. The 650 wines are led by natural and biodynamic labels, along with artisan Champagnes and rarities.
