Minibar is the visionary brainchild of Sébastien Fleury, the former sommelier at Martin, and Matt Hiltemann who hails from the Quo Vadis in London. In their eclectic setting, which blends exposed stone walls, a marble bar and bric-à-brac mirrors, the duo designs inventive dishes that pair with wines mid-way between the classics and some more daring choices.
